Limoux is the region that gave birth to sparkling wine. In 1531, the monks of Saint Hilaire discovered the first sparkling wine there. Situated in the foothills of the Pyrenees, these vineyards benefit from the cool climate necessary for the production of quality sparkling wines. This exceptional quality had even found an echo on the other side of the Atlantic: at the Maison Blanche. Indeed, Thomas Jefferson, was the greatest admirer of Limoux and discreetly cultivated his love for France and for the Cremant de Limoux. In fact, Limoux wine was the only sparkling wine he kept in his personal cellar.
